Saturday, May 20, 2006 Tortellini Vegetable Melt

1 pkg (350g) fresh cheese tortellini
1 medium zucchini, sliced
1 medium red or green pepper, coarsley chopped
1 medium onion, chopped
1 tbp olive oil
3 cups prepared marinara sauce
1/4 tsp red pepper flakes (optional)
1 pkg (340g) shredded Italian cheese blend

1. Prepare tortellini according to package directions. Drain.

2. Combine zucchini, pepper, onion and oil in large nonstick skillet. Saute veggies over medium heat for 6-8 minutes. Stir in sauce and redf pepper flakes; bring to boil.

3. In 2-qt shallow casserole, combine tortellini, veggie mixture and 1-1/2 cups cheese. Sprinkle the top with remaining cheese.

4. Place under broiler and heat 2-3 minutes or until cheese melts

Serves 6
