Saturday, January 13, 2007 Basic Stir Fry Sauce


1 1/2 tsp. sesame oil
1/2 tsp. minced garlic
1/2 tsp. minced ginger
1/2 cup chicken broth
1 Tbs. soy sauce
1 Tbs. brown sugar
1/8 tsp. Tabasco
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 tsp. lemon or lime juice
1 1/2 tsp.cornstarch
1 Tbs. rice wine or sherry


1. Heat the sesame oil in a small saucepan. Add the ginger and garlic and stir-fry 15-30 second over medium heat to bring out the flavor.

2. Add the chicken broth, soy sauce, brown sugar, Tabasco, salt, pepper, and lemon juice. Bring just to a boil, stirring.

3. Dissolve the cornstarch in the wine and whisk into the sauce. Heat until sauce thickens and reaches a full boil. Simmer for 30 seconds. Remove from the heat and set aside.

Wednesday, January 10, 2007 Grilled Marinated Chicken

I like to use skinless chicken breasts with this marinade. It's really tasty!


4 lbs. chicken parts of your choice
1/2 cup red wine vinegar
1 cup soy sauce
1/2 cup vegetable oil
2 tsp. oregano
1 tsp. basil
1 tsp. garlic salt
1/2 tsp. pepper

Place marinade with chicken in a large ziploc bag and marinate overnight. Grill chicken until it reaches 160° at the thickest part, or until white all the way through and juices run clear. If you do not have a grill, you can broil or bake the chicken in the oven.

Tuesday, January 09, 2007 Mushroom Casserole


2 tablespoons of butter
2 stalks of celery finely chopped
1 cup of onion diced
2-3 large cloves of garlic minced
3/4 tsp of salt
1/4 tsp of thyme
1/4 tsp of dry mustard

2 lbs of mushrooms coarsely chopped
lots of pepper (fresh ground if you can)

2 tablespoons of flour

4 tablespoons of sherry

4 slices of 100% whole wheat toast - crispy and buttered.

1/2 cup of sharp cheese

4 large eggs
1 cup of milk
Paprika

Saute onions, celery and herbs over a medium heat until onions are clear (about 8 min).

Add mushrooms and pepper and saute for another 5 minutes.

Slowly add flour, cook for 3 - 5 minutes. Add sherry, cook for another 3 -5 minutes. Place contents into a buttered casserole dish.

Top with bread, followed by cheese.

In a seperate bowl, mix eggs and milk together. Pour over mix.

Sprinkle paprika on top.

Cook in 350 oven for 45 minutes.
