Tuesday, January 10, 2006 Appetizer Shrimp Kabobs

2 lb shrimp
1/2 cup lemon juice
1/2 cup vegetable oil
1/4 cup soy sauce
3 tbsp fresh parsley, chopped
2 tbsp onion, chopped
1/2 tsp salt
1/2 tsp pepper
1 clove garlic, minced

1. Mix all ingredients together. Marinate 2 to 3 hours.

2. Soak wooden skewers in water while shrimp marinates. Thread shrimp on skewers when ready to cook.

3. Broil 3-4 minutes, 6 inches from heat, on each side. Baste occasionally with reserved marinade.

Note: These can also be done on the bbq.
