1 (6oz) package lime gelatin
2 cups boiling water
3 cups chilled pineapple juice
1 (2L) bottle chilled lemon-lime flavored soda or ginger ale
2 cups chilled vodka (optional)


1. Pour the gelatin mix into a large bowl. Slowly stir in the boiling water. Stir at least 2 minutes, until the gelatin is completely dissolved.

2. Stir in the pineapple juice, the entire 2 liter of soda and the vodka. Let cool to room temperature

Sunday, May 06, 2007 Orange Smoothie


1 cup vanilla ice cream or frozen yogurt
3/4 cup milk
1/4 cup frozen orange juice concentrate

Place all of the ingredients into a blender. Process until smooth. Pour into 2 glasses & serve immediately.

Friday, December 15, 2006 Candy-Cane-Tini


1 ½ oz vodka
1 tsp peppermint schnapps
1 oz club soda
Mini candy cane, for garnish


Shake ingredients in a cocktail shaker with ice. Strain into glass. Place a candy cane in the glass. It will turn the drink pink and adds to the flavor.

Option: Create a candy cane "rimmer" with crushed candy canes.

Saturday, August 12, 2006 Mai Tai Slush


1.5 cups pineapple juice
2 cups lemon or lime sherbert
1 cup crushed ice
1/4 cup rum
2 tbsp orange liqueur
lime slices


Combine all ingredients, except lime slices, in blender. Process until well blended. Pour into glasses. Garnish with lime slices.

Makes 4-6 servings

1 cup (250mL) orange juice
1/2 cup (125mL) blueberries
2 scoops fat free vanilla-flavoured frozen yogurt
1 tablespoon (15mL) honey
1/4 teaspoon (1mL) vanilla extract
1 cup (250mL) crushed ice

- Place all ingredients in a blender and blend until smooth. Pour smoothie into a large glass and garnish if desired.

Makes 3 servings

1/2 oz Kahlua
2 1/2 oz milk
1/2 oz Amaretto
edible green and gold powder for garnish (found at cake-decorating supply stores)


1. Pour the ingredients into a shaker with ice cubes. Shake vigorously.

2. Strain into a chilled cocktail glass.

3. Sprinkle the green and gold powders on the top.

Nutty Irishman (shooter)


1/2 oz shot Irish cream liqueur
1/2 oz shot Frangelico


Pour the ingredients into a mixing glass half filled with ice. Cool the liquids by swirling it in the glass. Strain in to a rocks glass. Shoot it. Repeat!

Irish Coffee


1 jigger Irish cream liqueur
1 jigger Irish whiskey
1 cup hot brewed coffee
1 tablespoon whipped cream
1 dash ground nutmeg


In a coffee mug, combine Irish cream and Irish whiskey. Fill mug with coffee. Top with a dab of whipped cream and a dash of nutmeg.

Monday, February 06, 2006 Orange Blossom Punch

I just made this punch for my daughter's Strawberry Shortcake party. Adults and kiddies both enjoyed it.


1 cup frozen orange juice concentrate, thawed
10 ounces frozen strawberry daiquiri mix concentrate, thawed
4 cups cold water
1 bottle (750 ml) sparkling white grape juice, chilled
ice cubes


1. In a punch bowl combine thawed concentrates. Add 4 cups cold water; stir to combine.

2. Gently add grape juice, but do not stir. Serve immediately over ice. If desired, garnish with strawberries and orange wedges.

Serves 12

Grown-Up Option: May use champagne in place of sparkling white grape juice.

1 quart of Brandy
1 ounce of Espresso Coffee
3 cups of sugar
1 1/2 cups water
1 Vanilla bean cut lengthwise

Dissolve sugar and coffe with water. Do not boil. Cool and add remainder of ingredients. Age 3 - 4 months.

Tia Maria


3 1/2 cups sugar
2 1/2 cups water
4 1/2 tbls instant coffee

Mix together and bring to a hard boil for 10 minutes. Cool and add either
1 quart of Vodka or
1 quart of Brandy

Add 1 1/2 tsp. vanilla


*** For a desert
1 scoop of ice cream
cover with 1 ounce of Tia Maria
Top with crumbled chocolate

Wednesday, November 09, 2005 Hot Buttered Rum Batter

Simply delicious! I like to use Captain Morgan's Spiced Rum and to top it off with a spoonful of cool whip.

1 pound butter
1 pound brown sugar
1 pound confectioners' sugar
1 quart vanilla ice cream, softened
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg


1. Melt butter in a large pot over medium heat. Blend in brown sugar and confectioners' sugar. Remove from heat, and whisk in the ice cream, cinnamon, and nutmeg. Pour mixture into a plastic container, seal, and freeze.

2. In a coffee mug, measure 2 tablespoon Hot Buttered Rum Batter and 1-2 oz of rum, then fill cup with boiling water. Stir and sprinkle top of drink with nutmeg.

*You can keep this in the freezer for up to 3 months.
